Hungry Girl: Ooey-Gooey Chili Cheese Nachos

I’ve got another Lisa Lillien Hungry Girl Recipe for you today… Ooey-Gooey Chili Cheese Nachos
We munched on these for dinner last night and they’re definitely hubby approved. And at more than half the calories (216) per serving as your average take out nachos, they're waistline approved too! 

All high marks - however - Nachos aren’t the most photogenic of meals – so I opted for a prettier picture… nachos look like nachos – if you need a visual, try google!

One 7-ounce bag baked tortilla chips
1 cup low-fat turkey or veggie chili
¾ cup salsa
½ cup light soymilk
3 oz fat free block cheddar cheese
1 wedge (Laughing Cow) light swiss cheese
2 tbs fat free cream cheese
2 tbs fat free sour cream

Place all three cheeses in saucepan with the soymilk.
Heat over low heat, stirring occasionally.
Continue until all cheeses have melted and the sauce is thoroughly mixed an hot.

Prepare chili according to package directions.

Pour cheese sauce over the chips, top with chili and spoon on sour cream if you wish. 

Serves 6.

Notes from my kitchen:
1. You can make your very own Hungry Girl "Dan Good Chili" or opt for premade at the grocery store – check the freezer section…
2. I didn’t have soymilk – skim worked fine.
3. I didn’t have Laughing Cow swiss and eyeballed a “wedge” from my hunk of swiss already in the fridge. I’m all about using what you’ve got – who wants to spend more time at the grocery store than necessary???
4. Lisa recommends microwaving the chips to slightly heat them… I threw them in our toaster oven on “warm” for a few minutes and they were delish!
